Did you know it's easy, quick, and very inexpensive but a very impressive piece of protein for your sandwich or salad? You can buy or make your own halloumi cheese.

Today my friend coming over for lunch is a vegetarian and I'm making halloumi wrap, a healthy vegetarian sandwich, and full of good-for-you ingredients.
There are so many good things about this recipe, but I’m just going to give you the highlights so you can get cooking ASAP:
First of all, it is vegetarian, but high in protein. The star of this recipe is fried halloumi. It’s not a gooey cheese, but a firm squeaky cheese from the Mediterranean island of Cyprus that doesn't melt, puddle, or produce a single stretchy thing.
Super quick. Super easy. You will want to eat a Grilled Halloumi wrap for brunch, lunch or dinner.
It’s healthy, inexpensive and a very impressive sandwich; non-vegetarians won’t miss any meat.
GRILLED & WRAPPED
Thanks to its dense, meaty structure, halloumi can take over the lead role in dishes that typically star meats. To show off the cheese's main-character qualities, I headed outside to craft a wrap sandwich with thick, grilled slabs of halloumi at the center.
I laid the slices on the preheated and well seasoned grate (cast iron pan is best your friend here) and flipped them after 3-4 minutes or so to get grilled marks on each side. All in all, it was hardly more trouble than grilling a burger bun.
I bundled the hot, smoky cheese and tomatoes, olives, and herbs into the pitas along with bright, crisp pickled red onions, crunchy kale and lemony-garlicy hummus. When I cut the wrap down the middle for serving and pulled the two halves apart, not a single melty, cheesy thread emerged - and that was perfectly all right with me.
About Ingredients for Grilled Halloumi Cheese Wrap
This wrap is high in protein and fiber. And each ingredient is clean and totally good for you.
Pita bread - I used my homemade Cyprus style pita bread, a wonderful bread. Slow fermentation allows this bread be more digestible. Any kind of flat bread will do wonderfully here. Before You Ever Buy Bread Again…Read This!
Halloumi cheese - traditionally this cheese is made out of goat's and sheep's milk and preserved in a brine with salt and mint. But more likely you will find it plain in a vacuum sealed plastic bag. I used homemade halloumi cheese that I made out of cow's milk. You can find the recipe here.
Hummus or Tzatziki Sauce - if you prefer to buy, make sure the all ingredients are clean. If you want to make it yourself, it's super easy and can be used in many ways, and keeps in a fridge for 5 days. Here is my easy recipe for tzatziki sauce or hummus.
Kale and fresh herbs - I used dill and parsley. A wonderful crunch, beautiful green color and flavor. Not to mention that they are a powerhouse of antioxidants, vitamins and fiber.
Tomato, olives and pickled red onions - are amazing bombs of flavor and overall goodness. Don't forget to season the tomato with salt before using. It's amazing how much more flavor you get from this simple step. Red onions I prefer pickled in my sandwiches. I did a quick pickling of my red onion; just a bit of vinegar 15 minutes before using onion will take off that sharpness. So easy. Storing and Making Ahead Grilled Halloumi Cheese Wrap
These halloumi wraps taste really fantastic warm, however you can have them cold, too. You can make these the day before if you want to take them to school or work. You can grill the halloumi the night before too. Keep all ingredients covered individually in the fridge.

Yielded: two wraps
Ingredients
2 pitas bread (I used homemade)
8 slices halloumi cheese
1/4 cup sliced pickled red onion (buy or make yourself, check the note above)
2 cocktail tomatoes, sliced (and seasoned with salt just before assembling wrap)
1/4 cup black olives, sliced in half
2 kale leaves, chopped
1/4 cup fresh chopped dill and parsley
1-2 tablespoons of olive oil (for the grilling of the cheese and finishing the sandwich before the wrapping)
4 tablespoons of plain hummus or tzatziki sauce
Directions
Slice the halloumi into 8 slices, if you are buying halloumi you should get easily eight slices out of one block of cheese. I didn't season my homemade halloumi since it has plenty of salt and mint flavor, too. Make sure to paper dry before cooking each slice.
Place cheese on well preheated cast iron pan and grille for 2-4 minute per side. Drizzle with olive oil if needed.
Meanwhile, warm up your pita bread in the microwave or oven. Place a pita on a clean chopping board. Add a two tablespoons of the hummus or tzatziki sauce.
Lay on top of the hummus cooked cheese, then slices of tomato (don't forget to season just before assembling sandwich), pickled onions, olives and herbs with kale.
Drizzle with some olive oil. Fold the bottom of the wrap up over the filling. Serve immediately. Or wrap with parchment paper with some rustic looking ribbon or twine to make a beautiful presentation like from a 5 star restaurant.
