It's no secret that I love coffee. And, anything to do with coffee. When the temperature is rising in the South, drinking cold beverages is another joy of life. Since 2021, every time I see Starbucks Pistachio Iced Lattes on their signs, it makes my mouth water. But I can’t justify consuming that much sugar (40-50 grams in a Grande size) plus all the junky additives. It's a truly toxic treat for the cost of about $6+ per serving.

Sugary beverages are the most common culprit, but often the most overlooked, source of added sugar.  Sugary coffee beverages have taken off. I often wonder if people even know they’re basically drinking a dessert. With my love for Pistachio coffee ice cream, I knew I had to find a way to make it at home for less. I developed this recipe a while ago, but haven't shared with you yet.

This pistachio iced latte recipe is the Healthiest Pistachio Iced Latte you have ever tried. Amazing drink similar to Starbucks’ pistachio latte can be made in 5 minutes (with a little prep ahead of time).   A health and energy boozed beverage. The recipe is made from scratch and uses homemade pistachio cream to make a creamy, nutty, super flavorful iced coffee.

  • Make or BUY pistachio milk!

  • Make or BUY pistachio cream (it takes only 5 minutes to make your own)!

  • Freeze coffee (use this ice cube tray to make it)!

What do I like about Pistachio Iced Latte?

  • It's a truly delicious drink.  Have you ever had pistachio ice cream from a Baskin Robbins? Tastes just like it.

  • Can be made into a hot beverage so easily, just steam your milk and use hot coffee instead.

  • Made entirely with clean and good for you ingredients.

  • No special equipment needed.

  • You can take shortcuts and buy some components, just watch out for the ingredients' list, but I do recommend to make everything yourself.

  • Did you know that a pistachio tree takes about 10 to 12 years to produce the very first crop.

  • Did you know that pistachios are the edible seeds of the pistachio tree, but most people refer to them as pistachio nuts. 

  • Pistachios nuts are actually honored with their own day of the year! Every Feb. 26 is National Pistachio Day. Remember this.

  • The pistachio was first introduced to the U.S. by the USDA plant exploration service in 1890.

  • Pistachios are rich in essential amino acids, vitamins, minerals, antioxidants, and heart-healthy fats. 

  • Pistachio nuts help to keep a healthy heart, and support your vision because they contain a significant amount of the carotenoids.

  • Unlike other nuts, pistachios are low in oxalates. This is very good news, and means these nuts do not need to be soaked.

  • Pistachio nuts are a good source of healthy polyunsaturated and monounsaturated fats that may help reduce the risk of heart disease.

Prep time: 2 minutes

Making time: 10 minutes

Total time: 12 minutes

Servings: 4 medium servings

Ingredients for the pistachio latte

4 cups pistachio milk (recipe below)

1 cup pistachio cream (recipe below)

4 cups strong brewed coffee (freeze into ice cubes ahead of time)


Ingredients for the pistachio milk

1 cup raw pistachios (soaking is optional)

5 cups filtered water

Pinch of Celtic or pink salt (optional)

1 tablespoon raw honey or 1 date (optional)


Ingredients for the pistachio cream

1/2 cup pistachio butter (I used homemade in the video)

1/2 cup white chocolate (really good quality, with high amount of cocoa butter)

1 cup pistachio milk or milk of your choice

1/4 cup honey or maple syrup

Pinch of matcha powder (optional)


Directions for pistachio latte

  1. Freeze your strong coffee into an ice cube tray. This step make ahead of time.

  2. Place pistachio nuts and 4-5 cups of water, in blender and blend on high for 1-2 minutes.

  3. Pour milk into a bowl using a fine mesh strainer, separating the pulp from the milk. Don't throw away the pulp, use for pancake batter, morning oats, etc. Store pistachio in an airtight container in the fridge for up to 7 days. So this step can be made a head of time.

  4. To make a pistachio cream add all ingredients into small sauce pot, whisk all together, and cook until everything incorporates, will take 3-5 minutes, keep low heat. Keep whisking. After everything melts and incorporates, keep cooking for another minute or so to have a thicker consistency. Should have a creamy, glossy texture. Then you are done. Set aside, let cool down slightly.

  5. To assemble pistachio latte add to a tall glass two tablespoon of pistachio cream, then add coffee iced cubes. Pour a cup of pistachio milk, top with extra spoon of pistachio cream, place your straw in the glass. STIR! SIP! ENJOY!  Have you subscribed to my cooking channel?
