Spicy Asian Cucumber Salad (VIDEO)

Here is a spicy Asian Cucumber Salad. Great for entertaining as a small bites platter, or as part of a family dinner. Excellent as a summer dish, but these Persian cucumbers are good any time of the year, since its easy to find them year round.

A crispy, refreshing and spicy cucumber salad. Seasoned with soy sauce, Korean's red pepper, rice vinegar, garlic, ginger, honey, and sesame oil.

A refreshing side dish with spicy Asian flavors! Ready in 20 minutes or less!


WHAT DO I LIKE ABOUT THIS SPICY ASIAN CUCUMBER SALAD

My boys love cucumbers, I have to say a lot. Cucumber is their favorite vegetable! They are crispy, crunchy and super hydrating. I love the subtle taste of this water packed vegetable and how it can easily be dressed up to be elevated.

So as a recipe developer, when I created this I wanted to really make something different, so I used Andrew Zimmer's spiral cutting trick on my cucumbers.


HOW LONG CAN THIS SPICY ASIAN CUCUMBER SALAD LAST

This wonderful salad is good for a whole week. Each day the flavor will get only deeper and deeper since the fermentation process is continual. Its also great to eat right away, kind of like fresh kimchi. However, the best benefits occur as you allow the good bacteria do its thing, so waiting a bit to eat is always a good thing.


WHAT TO SERVE WITH THIS SPICY ASIAN CUCUMBER SALAD

Try serving on the side with rice along with some sort of Asian flavored protein such as omelets, fish, meat, etc. and you good to go.

Ingredients for spicy Asian cucumber salad

6 Persian cucumbers

2 tablespoons soy sauce

1-2 tablespoons raw honey

2 tablespoons plain rice vinegar

2 tablespoons Mirin (optional)

1 clove of garlic grated

1/4 inch of ginger root grated

1 tablespoons sesame oil

1 tablespoon fish sauce (skip if you like to keep vegan)


Directions

  • Cut cucumbers as spirals, but its optional. Watch my video for this step.

  • Mix the rest of the ingredients in a bowl and then pour over the cucumbers. Give a good mix.

  • Place in the fridge at least for 30 minutes.

  • Enjoy within a week.
