There is something deeply comforting about a simple Ukrainian breakfast made from ingredients already waiting in the kitchen — eggs, fresh dill, creamy homemade farmers cheese, and butter sizzling in a warm pan.

This Dill Homemade Farmers Cheese Ukrainian Omelet became even more special in our home because my children filmed the entire process together, laughing, mixing, and proudly flipping the omelet themselves.

In many Ukrainian homes, farmers cheese — often called syr or tvorog — is used in both sweet and savory dishes. While many people know it from syrniki, it also makes an incredibly soft and protein-rich omelet filling. The creamy cheese melts gently into the eggs while fresh dill brings brightness and the unmistakable flavor of Eastern European cooking.

Directions for the Ukrainian Omelet:

Step 1: Prepare the Filling

In a bowl, combine the homemade farmers cheese with chopped dill, a pinch of salt, and black pepper. If your farmers cheese is very dry, add a spoonful of sour cream for extra creaminess.

Step 2: Whisk the Eggs

In another bowl, whisk together eggs and milk until smooth and slightly frothy.

Step 3: Cook the Omelet

Heat butter in a nonstick skillet over medium-low heat. Pour in the eggs and allow them to cook gently.

When the eggs are mostly set but still soft on top, spread the dill farmers cheese mixture over one half of the omelet.

Step 4: Fold & Finish

Carefully fold the omelet over the filling. Continue cooking another minute until warm and fluffy inside.

A Little Taste of Ukraine

This omelet reminds me of the kinds of simple breakfasts many Ukrainian families grow up eating — fresh herbs from the garden, homemade dairy products, and eggs cooked slowly in butter. These recipes are not complicated, but they carry warmth, hospitality, and tradition. Matrona is especially known in our home as the true lover of dill — she adds it to everything.
