Crepe Cake with Berries and Farmer's Cheese (VIDEO)


It's the beginning of 2023 and the beginning of new resolutions, new dreams, etc.

People are always excited to do something new and extreme with their diets and eating habits, but not me. I always stand by the same opinions and my commitments to cooking homemade meals using clean fresh and local ingredients as much as possible.

When it comes to eating clean, fresh and local, this doesn't just mean for meals that I prepare but also for every dessert and special treat that we eat and that I serve to friends too!


Recently, my family and I had been out of town and when we returned home, I glanced at my calendar only to notice that the next day I had a birthday party dinner scheduled for a dear friend. Time was of the essence, so I wanted to keep it easy and quick. Therefore, I decided that the dessert would be a crepe cake. This type of cake is a French pastry known as “gâteau de crêpes.”

Crepe cakes are incredibly tender, heavenly light, and flavorful, almost melting in your mouth. As elegant as this dessert looks and tastes, it is surprisingly cheap to make at home. Crepe cakes don’t require any expensive special ingredients. It looks fancy, tastes fantastic, and is perfect for any occasion.

WHAT DO I LIKE ABOUT THIS CAKE?

It's a light, elegant dessert or breakfast.

Yes, this cake is not overly sweet, and each component is easy to identify because individual flavors aren't masked in heavy amounts of sugar. There are no harmful ingredients. In fact, you can use only honey here instead of sugar.


Crepes make a scrumptious and versatile breakfast option, and making farmer's cheese blueberry crepes are no exception. With a delicate texture and delicious, sweet and tangy flavor, these crepes are sure to tantalize the taste buds of all who indulge. Making farmer's cheese berry crepes is surprisingly easy and requires only a few simple ingredients. The crepes themselves are made with a simple batter of eggs, milk, and flour, while the cheese and berry filling are a creamy combination of farmer's cheese, sugar, and juicy fresh blueberries. The result is an impressive and indulgent breakfast that will have everyone coming back for more.


ON THE CREPE BATTER

Just a few words about batter: there are so many different kinds of crepe batter, but I found there's none that works as good as a classic French crepe batter.

  • It is the batter that Julia Child demonstrated making in a 60th on a TV show of a Boston channel. This recipe is the one I published two years ago, and it is 100% proof for crepe making success.

  • Crepes can be made ahead of time! ONE WEEK in the fridge or ONE MONTH in the freezer!

  • Everyone who has made them always has a great result.

ON THE FILLING

  • Filling can be made ahead of time!

  • The filling can vary according to your preference. Every berry you can imagine can be turned into a crepe filling. Stone fruits such as peach, plum, apricots are excellent choices or even apples are a great way to complete this delicious cake!

  • Fresh or frozen fruit; It doesn't matter!

I chose blueberries because that's what I had in my freeze.

So, this filling has TWO main ingredients BERRIES and FARMER'S CHEESE.

If you are buying farmer's cheese, make sure to drain it before you use it. Using two paper coffee filters is ideal for draining the cheese. Also, you can make it yourself; IT'S SO EASY.

21-22 crepes (two batches of crepes 9.5 inches each)

350 grams (1 & 1/2 cups) fresh or frozen blueberries (or berries of your choice)

50-80 grams (1/2 -3/4 cup) powdered sugar or honey (berry filling)

25 grams (1/4 cup) corn starch

Juice and zest of one lemon

250 grams (3 cups) farmer's cheese (I used homemade in the video)

300 gram (1 & 1/4 cups) sour cream or creme fraiche

50-80 grams (1/2 -3/4 cup) powdered sugar (farmer's cheese filling)

250 ml heavy cream

2 Tablespoons vanilla extract

Fresh strawberries for garnish


Notes

  • First get your crepes ready and at the moment when it's time to roll them and begin the layering process, the crepes should be slightly warm. It's important otherwise the crepes won't be pliable, and they will break apart. So, if you made them ahead of time, reheat carefully in the microwave covered with plastic wrap or wrapped in foil in the oven.

  • Defrost them ahead of time if you are getting them from the freezer!

  • The second part of the cake is the blueberry (or any berries) compote, this filling has to be cooked and cooled by the moment you are ready to assemble the cake. Making the blueberry filling ahead of time is a really good idea.

  • The 3rd part of the cake is the creamy farmer's cheese filling.

Directions

  • To make the blueberry filling, add the blueberries to a small saucepan, then add the zest, juice of lemon and powdered sugar.

  • Place on low heat, stir and slowly let it come to a boil.

  • In a cup mix cornstarch with a few tablespoons of water and whisk together. Pour the cornstarch mixture into the pot with the blueberry mixture.

  • Cook for a few minutes, stirring once in a while. Cook until you don't taste the starch, usually no longer than 5 minutes.

  • Using a potato masher, press the berries a few times. The blueberry filling is done and should be a glossy beautiful compote with some whole and some crushed berries. Set it aside and let it cool down to room temperature or just slightly warm.

  • To start making the farmer's cheese filling, add heavy cream, farmer's cheese, sour cream, powdered sugar (or honey) and vanilla to the blender. Pulse a few times and it's ready.

  • Now having all three components, you are ready to assemble the cake.

  • It is highly recommended that you watch the video on how to assemble the cake. The assembly of the cake is just as important as the creation of all these delicious ingredients.

  • Take a springform pan and remove the bottom. Place the ring of the pan on a platter.

  • Now drape 8 crepes over and around the ring of the springform pan. Then lay a crepe on the bottom.

  • Prepare 10 crepe rolls by first placing blueberry compote on each crepe, and then layer with the farmer's cheese and then roll.

  • Lay 5 rolls vertically and then add a layer of the farmer's cheese mixture and then lay a crepe onto of the cheese.

  • Lay 5 rolls horizontally and then layer with the farmer's cheese mixture and then the blueberry filling. Next, layer with a crepe and then with the farmer's cheese mixture.

  • Now take the crepes draped over the springform ring and place them on top of the cake and leave an opening in the center.

  • Take a strawberry and cut it into a rosette and place in the opening in the center.

  • Take additional strawberries and make tiny cuts but not completely cutting through so that you can fan out the strawberries and then arrange the strawberries on top of the cake.

  • Wrap the cake in plastic wrap and place in the fridge for 2 hours but overnight is best. After it has chilled take out of the fridge and enjoy.
