Generally speaking, a tomato sandwich of any kind is an iconic summer "go for" meal. This creamy-dreamy juicy sandwich with a beautiful crunch from the toasted bread and a richness from the Crème Fraiche compliments the acidity of the tomatoes and the depth of miso.

Tips to create the best experiments with your tomato sandwich

Few Words about Crème Fraiche
I'm a big lover of fermented foods and in my blog I have a great number of recipes where I suggest using crème fraiche (fermented cream). I promise that crème fraiche is very easy to make. Once you taste the magic of this homemade sour cream, you will become a regular creator. Sure, it takes time, but the effort is minimal and the payoff is absolutely marvelous.
How do you make crème fraiche?
There are many ways it can be created, so let me break down all the various ways and then you can choose which method suits your cooking style.

How to choose the best cherry tomatoes?
I prefer cherry tomatoes that are 1 inch in diameter, some larger varieties have tough skins. Also, if you can't find thyme, substitute fresh oregano or marjoram.
These petite tomatoes provide great acidity and meaty texture. Broiling collapses the tomatoes, so they fit snugly on the bread, which enhances their umami flavor.

Yield: 4 portions
Ingredients
12 ounces cherry tomatoes
4 (1/2 inch thick) slices of bread (I used whole wheat sourdough bread)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon pink salt
2 teaspoons fresh thyme
2 teaspoons honey (raw local honey is always my first choice)
2 teaspoons miso (I used white miso in the video)
4 teaspoons whole-grain mustard
1 ounce of parmesan cheese
2 tablespoons extra virgin olive oil
1 cup Crème fraiche or ricotta cheese
Directions
Turn on the oven to broil at 450F.
Place sliced bread onto a baking sheet, drizzle with olive oil and place into the oven for 5 minutes, and keep an eye on it. The low-medium rack is best for this.
In a bowl add tomatoes and one tablespoon of olive oil, along with the salt, pepper and fresh thyme. Mix together. Spread cherry tomatoes onto separate baking sheet and place into the oven for 5 minutes next to the bread. Keep an eye on it.
To the same bowl add miso, honey and mustard. Whisk all together. Set aside.
Take bread out of the oven and let it cool. Take tomatoes out as soon as you notice the skins starting to turn a little brown and are beginning to break apart.
Mix tomatoes while they are still warm with a miso mixture.
Spread Crème fraiche on a cooled bread, arrange the tomatoes on top and sprinkle with shredded parmesan. And a little garnish which is optional but nice (sprinkle with fresh thyme and drizzle with olive oil). ENJOY!
