Easy, quick and a very impressive appetizer, or topping for a salad. If you are looking for a delicious and healthy recipe that will be a dinner party hit, this is it.
I have always been a fan of goat cheese or goat milk. We love to visit local farms, and goat farms are always our favorite. Every time we have a chance to have raw milk, I'm always trying my hand at cheese making. Someday I will share my cheese making recipes. I have many uses for goat milk in my kitchen including the making of kefir the most nutritional dairy milk: The champagne of dairy.
Here are a few of my recipes using goat milk:
1. First of all, it's delicious, good for you and can be used many ways within
your cooking adventures. Many countries around the world enjoy the eating
of cheese, but France in particular is one of the world’s leading consumers
of cheese and butter, yet the French don’t have higher rates of heart
disease compared to other nations that consume less of dietary cholesterol
and saturated fat.
2. It is better for you because goat cheese is much, much less inflammatory.
3. Goat cheese provides healthy fats that are medium-chain fatty acids. In fact,
goat’s milk contains more medium-chain fatty acids than cow’s milk. These
types of fats are rapidly broken down and absorbed by the body and are
less likely to be stored as fat. Healthy fats are an important part of every
diet because fat helps facilitate nutrient absorption, hormone production
and protects neurological health.
4. Goat cheeses are a great source of calcium. Calcium also helps balance
levels of other minerals, allowing them to be more available to your body
including magnesium, phosphorus and potassium. These minerals work
together to maintain balance and regulate cholesterol levels, heart rhythms,
nerve and muscle function and blood pressure.
1. Swap fresh goat cheese for fried on any salad. Try Fig-Beet Salad with Goat Cheese, Walnuts & Citrus Vinaigrette or
Fig-Beet Salad with Goat Cheese, Walnuts & Citrus Vinaigrette.
2. As it is with marinara sauce.
3. As a topping on a regular burger or vegetarian such as black bean.
4. As part of a cheeseboard.
5. On an arugula salad with berries, red onion, and walnuts.
Freeze goat cheese for 15-30 minutes for easier slicing.
Freeze goat cheese disks for 15 minutes for better frying.
Use a knife dipped in hot water to make slicing easier.
Goat cheese, plain log of chevre (Fresh goat milk cheese).
Crushed black walnuts, or any nuts you prefer. (In this video I used black walnuts.)
One egg.
Whole wheat flour, regular all-purpose or rice flour and the GF option will work too.
Ghee, or any other oil with a high smoke point will work.

Prep time: 15 minutes
Cook time: 10 minutes
Total time: 25 minutes

Serves: 2 portions as an appetizer
8 oz log of goat cheese chevre
4 Tablespoons of whole wheat flour (rice flour for GF option)
1 egg
4 Tablespoons of crushed black walnuts (any nuts will work)
Salt and freshly ground black pepper to taste
Ghee for frying
1. Slice the log of cheese into 8 pieces.
2. Place sliced cheese into the freezer for 15 minutes.
3. Beat the egg. Dip one piece at a time into the flour, then into the egg and
finally, into the crushed nuts. Make sure all sides are covered. Place back
onto the platter.
4. Preheat a cast iron pan, add a few tablespoons of ghee and allow it to get
nice and hot. Keep the pan set on medium heat.
5. Place goat cheese in the pan and fry for 2-3 minutes per side.
6. Once cooked, place the fried cheese on a paper towel. This step is
optional. Next, transfer to a serving platter. Sprinkle with coarse salt and
freshly ground black pepper. Enjoy right away.
